Cold pressing extracts oil by mechanical pressure alone, below the temperature at which the natural flavour compounds and vitamin E break down, and without the hexane and caustic refining that a commodity oil goes through. Yield is lower, which is the whole reason cold pressed oil sells at a premium, and why buyers are sceptical of anyone claiming both cold pressing and commodity pricing.
